Jaggery is an unrefined natural sugar that is produced without adding any chemicals. More than 70% of the total world jaggery production is done in India. Jaggery is popularly known as the “medicinal sugar” and is nutritionally comparable with honey. It has been used as a sweetener in Ayurvedic Medicine for 3000 years. Indian Ayurvedic medicine considers it to be beneficial in treating throat and lung infections.
Jaggery is majorly used in the food processing industry for confectionery items, toffees, chocolates, chewing gums etc. Gur is popular in South East Asia, Latin America, North Africa and Caribbean Islands, though different products(sugar cane, date palm tree, sago palm, coconut palm) are used in making gur in these areas)
Kolhapur is one of the largest producers of Jaggery in India and received GI Tag in 2011. The Kolhapur Jaggery is made without any chemicals (contains 80% sugarcane juice and 20% Sugar).
